The Best Sourdough Glazed Donuts

I have been craving wraps lately. My favorite wraps are those with LOTS of fresh veggies, some crunch, some cheese, a delicious tortilla, and just a whole lot of freshness in every bite. Last summer I made these wraps a lot. They were a go-to meal for me here on the farm because they are so fast and easy, and I usually have everything I need on hand. I love them because they taste delicious and they really fill you up without making you feel gross! 
Quinoa Veggie Wraps
Tortillas (try Truly Grain, they are the best)
1/2 c quinoa
1 1/4 c water
1/4 c salsa
cheese, grated
carrots, shredded
spinach
1 pepper, chopped (any color)
1 cucumber, diced
ranch dressing
salsa
In a small pot add quinoa, 1 1/4 c water, and 1/4 c salsa. Bring to boil. Reduce heat to low and simmer for 15 minutes or until liquid is absorbed. 
Prepare veggies. Assemble wraps, adding ranch or salsa if you prefer. Enjoy an easy meal!
Thoughts:
What more can I say? This is a quick dinner idea that tastes delicious and is easy to alter according to your family’s preferences. I sometimes add some shredded chicken, but love them without. Ranch or salsa is optional. I eat mine plain, but my husband’s life would not be complete without ranch dressing (a post coming soon on how to make your own without the added junk), so we always have it on hand.
