When I first found this recipe, I had been off of grains for about a month. I felt great and loved the “paleo” way of eating, but I was missing carb-like food! I wanted some bread and I wanted to BAKE.
I have been following Elana’s Pantry
for years now and this is the first recipe of hers that I actually tried, after ogling over her site for a year! I will be forever grateful I finally took the plunge, because this was an instant winner with my family.
After repenting and making many other recipes from her, I am so glad there are resources out there for those who can’t eat grains, or who choose not to. I have since found many others and have had fun experimenting with my own paleo-based baked goods. I adapted this one slightly. Kids love it!
