Pomegranate Pear Spinach Salad with Honey Lime Dressing
1 large bag fresh spinach
3 pears, diced
2 apples, diced
2 pomegranates, seeded
grated mozzarella cheese (about 1 c)
Combine in a large bowl.
Honey Lime Dressing
6 T raw honey
2 large limes
4 T fresh mint
Juice limes into small bowl. Chop the mint finely and add to lime juice along with honey. Whisk to combine.
Drizzle dressing over salad and toss lightly to combine.
Thoughts:
I loved this salad. It was light and fresh and the perfect addition to a heavy meal. I also made some cinnamon roasted almonds, chopped them, and had them for people to add if they wanted. I loved the addition and would just add them to the salad itself if there weren’t nut allergies in our family. The dressing is delicious and simple and adds the perfect amount of sweet and tangy flavors to this salad. I can’t wait to try it next summer with berries too!
