Hi, I'm Kels!

The Best Sourdough Glazed Donuts

Yet another recipe stolen from my sister! People who share recipes are the best. I used to be a little stingy about some of my recipes (not that I didn’t share, but felt like saying no sometimes . . . ) and then I realized how rude that was! I don’t like recipe hoarders. If you want to be the ONLY one in the world who can make something, that’s just selfish. Have you ever asked someone for a recipe and had them say “No.” AWKWARD. I make it a point to freely offer recipes now whenever asked (obviously, since I publish them on this blog too). I’ve also been known to force recipes one people when they don’t even ask. This one isn’t super fancy or 100% “clean” but it’s delicious and I make it often because it’s great for left overs and feeds us for a week.

Caylee’s Lasagna

2 lbs browned hamburger (I use elk, because it’s what I have!)
1 large can crushed tomatoes (or crush your own)
2 cans (15 oz. each) tomato sauce
1 T Italian seasoning

Combine in large bowl.

In a separate bowl combine:

2 c cottage cheese or ricotta
1/2 c freshly grated parmesan cheese
2 eggs
1 1/2 tsp real salt
2 T parsley flakes

Slice 2 lbs mozzarella cheese.
Whole wheat express lasagna noodles.

Layer in 9×13 pan:

1. thin layer of meat mixture (to prevent the noodles from sticking)
2. noodles
3. half of cottage cheese mixture
4. half of the mozzarella slices

Repeat these four layers. Add meat sauce last (on top) and then grate some cheese on top.

Bake for 1 hour in a preheated 375 degree oven. Remove from oven and let sit for 10 minutes before serving.

Thoughts:

This is one of those dishes that I think tastes better the next day. The layers have a chance to sit and soak each other up and it’s scrumptious. I highly recommend this recipe, especially if you’ve never attempted lasagna before. This will make you confident in your abilities because it’s so easy and so delicious! It’s a great meal to take to someone who is sick or just had a baby. One dish meals are some of my favorites, and this is no exception.
