Cinnamon Chia Waffles
If you have been working with a sourdough starter, you know that sometimes you end up with more than you know what to do with, and this cinnamon chia waffles recipe is perfect for those days when your jars or crocks are full to overflowing! This is an instant recipe – you don’t have to set up a sponge, so when you wake up and don’t know what to make for breakfast – these waffles are the perfect option. There is no flour added, it’s all starter and a few other simple ingredients. These cinnamon chia waffles are dairy and sugar free (until you go adding syrup, of course . . .) and are kid approved!
Ingredients

2 c starter

1/4 c (or more depending on consistency) milk of choice

4 eggs

1 tsp salt

2 tsp vanilla extract

1 1/2 tsp cinnamon

1/2 tsp nutmeg

4 T chia seeds
Step by Step Instructions
Step 1
If using a high powered blender – add all ingredients together and blend until smooth.
If using a regular blender – add milk, eggs, vanilla, chia seeds, salt, and spices and blend. Then take your starter and tear off small chunks, adding them one at a time to your blender. Otherwise your starter will ball up in the middle and not be incorporated..
Step 2
Pour onto hot waffle iron and cook until done.

- coconut cream
- whipped cream
- syrup – I use chokecherry syrup that I make and also maple syrup
- nut butter
- applesauce
