It can seriously taste AWFUL. It's really important to SOAK it first, for quite a while. Every grain should be soaked, even overnight ideally. If you cook quinoa with some salsa, it's great in tacos/wraps. I don't love it plain as a side. I have a dessert quinoa recipe coming up that I'm SURE will win you over.

For this recipe, I honestly think it would be pretty bland without the peppers and onion. You can use onion flakes if you want I guess, or puree them. It's the flavor that counts. Try it though, and let me know!
