The Best Sourdough Glazed Donuts

 Fried rice is an easy meal that I love to throw together last minute using leftover rice and whatever veggies I have on hand.

If you have leftover rice, make this. If you want to make rice just for this dish, I doubt you will be disappointed. I made my rice in the Instantpot and it was quick and painless while I chopped veggies.

The thing that I love the most about this meal is that it only uses one pan. With 6 mouths to feed and no dishwasher except my own two hands, that is a major plus!
I am also a huge sucker for pretty food, and this is the epitome of that to me. Lots of color, a plethora of veggies, and simple ingredients. This can easily be made Whole 30 compliant by opting out of the peas and subbing cauliflower rice for the rice.

Easy Fried Rice

Ingredients
  • [b]Choice of meat:[/b]
  • 2 chicken sausages
  • diced ham or chicken
  • 1 large egg
  • [url href=”http://amzn.to/2ecA8MP”]Coconut Aminos[/url]
  • 3 c cooked rice
  • [b]A variety of any of the following veggies:[/b]
  • 1 large carrot, sliced
  • 1 large stalk celery, sliced
  • 1/4 head small cabbage, shredded
  • 1 c broccoli, cut into bite sized pieces
  • 1/2 bell pepper, chopped
  • 1 c frozen peas
  • 1 c chopped jicama root
Instructions
  1. Prepare all veggies.
  2. Heat a large fry pan over medium heat.
  3. Brown sausage if using, then remove from pan.
  4. Crack egg into the pan and break the yolk, creating a flat egg. Fry until cooked through, flipping to finish. Remove from pan and slice thinly.
  5. Add veggies to the pan and saute until crisp/tender – 5-10 minutes depending on the quantity and type of veggies.
  6. When veggies are cooked to your satisfaction, add the rice, meat, and egg to the pan and mix together.
  7. Drizzle on coconut aminos to taste.
  8. When everything is heated through, it’s done!

    I just made this tonight and I too was surprised it tasted as great as it did. We made the rice pilaf for dinner last night and I had planned to use the leftovers for this fried rice. It literally came together in 5 minutes since I had some cooked sausage in the freezer already. I added a green onion to mine and it was delicious! I'm probably going to make this often. YUM!! 🙂

    I love the addition of the purple cabbage, so pretty! Jicama isn’t something I ever buy, so going to try that as well!

      I love the jicama in this cause it adds that extra crunch that I love in asian dishes! like a water chestnut, kinda!
